Somewhat Sassy S’mores

The cooler weather has caused me to have a craving. I have been dreaming about S’mores. But I wanted to put a healthier more creative flare on these tempting treats. So here goes-

 

You will need:

7 whole non-GMO graham crackers

¼ cup organic coconut oil

About 1 Tablespoon of filtered water

¾ of a large chocolate bar (cut into ½” or smaller pieces)

(I used Alter Eco Dark Quinoa organic chocolate 60% cocoa, for a touch of protein and fiber)

4 or 5 Dandies GMO- free air puffed marshmallows, cut into small pieces

1 handful organic raw walnuts

1 teaspoon organic cacao nibs

Cinnamon to taste optional

Pulse graham crackers in food processor until crumbled and fine. Pour pulsed graham crackers into a small bowl, add the coconut oil, and then slowly add water until the mixture forms a sticky gooey ball. Place about 1 teaspoon of mixture into each cup of a 12-cup small muffin pan; press down gently with fingers spreading mixture to the edges. Bake at 350 degrees for 5-7 minutes or until edges start to brown. Remove from oven. Stack cut chocolate and marshmallows into cups, alternating until full

Turn oven setting to broil.

Meanwhile, pulse walnuts and cacao nips in food processor about 8-10 times, add a few shakes of some cinnamon (or not) then generously sprinkle this mixture onto the top of the S’mores cups, and place under broiler. Broil until golden brown. Enjoy!

Makes 10 small muffin sized S’mores
